Egg White Breakfast Pizza



Ever since my health kick, I've spent a lot of time with Hungry Girl.  So far, a fruitful friendship is growing... first, in the form of an egg white breakfast pizza - yum!

This recipe is not only low in fat and calories, but it is still packed with flavor.  And the best news of all: you can make it in less than 10 min!  That's what we all want to hear, right?  Check it out.

Ingredients
  • 1/2 cup egg whites
  • 1/4 cup of chopped veggies (bell peppers, mushrooms, onions) or meat (I used one small leftover chicken breast that I marinated with basil and oregano, but turkey pepperoni is also a good choice)
  • 3 tbsp. tomato sauce
  • 1/4 cup (or less) of shredded mozzarella cheese
  • a light sprinkle of (garlic) salt, pepper, and red pepper flakes (optional)

Instructions

1. Spray a small frying pan with PAM and place it over low-medium heat.

2. Pour egg into the pan, cover, and cook for about 3 min. or until the egg is no longer liquid-y.  Then carefully flip the egg over to cook the other side.

3. Spoon tomato sauce, toppings, and cheese and sprinkle on the spices. "Bam!" - Emeril style.  I cooked the "pizza" for a few more min. covered until the cheese melted.

4. Slice and serve!

I also added a few shakes of Tapatio because I like 'em HOT!
