English Muffin Egg Breakfast Sandwich


Whether by choice or not, we are busy people living in a busy world.  Rarely do we spend an entire day at rest, enjoying the down time and appreciating God's creations... well, at least not while in law school anyway and certainly not during law school finals.

Given that it's finals season, I hope you've forgiven me for my lack of entries.  (I promise to return in full swing in a couple of weeks).  But don't let my MIA-ness fool you.  If there's one thing I do well during finals, it's eat well (oh HI, carbs!).  However, I'm still -- for the most part -- sticking to my health challenge. (notwithstanding my snacking on a cheese burrito at midnight).  Thankfully quick and easy (and relatively healthy) recipes such as these help me stay on track.

Ingredients:
  • One English muffin
  • 1 Laughing Cow cheese wedge (flavor of your choice)
  • 1/2 cup egg whites (I used egg beaters)


Instructions:

1) Scramble the egg in a small pan.  If you're really pressed for time, you can even microwave it.

2) Toast English muffin.

3) Split the cheese long ways and spread onto the toasted muffin. 

4) As the cheese slowly melds into the muffin, top with egg.  Assemble into a sandwich.  Take a moment to sit and enjoy this delectable meal... or if you must, take it to go.

  1. So yummy! Thanks for the shout out Doah! It also tastes great if you add Turkey Bacon or cut up Turkey Sausage!
