Bring on the Salads


1. D's Basil Pesto Pasta Salad - I didn't use a particular recipe and instead, used a lot of eyeballing of ingredients and some imaginative pairings. Though it seemed like everyone found it edible, if even tasty, I know exactly what I would do differently next time. Since I honestly don't know many of the measurements, let me at least share the ingredients that I used:
  • Rotilli pasta
  • Fresh basil + 5 cloves of garlic + Extra Virgin Olive Oil + salt = basil pesto! {the garlic overpowered the basil}
  • Sun-dried tomatoes in olive oil
  • Roasted red and yellow peppers
  • Though I forgot, I would have added some corn salsa (white&yellow corn, jalapeno, red onion)
  • Goddess dressing to taste & toss

2. Simple Summer Salad - super simple, super scrumptious (I love alliteration)
  • Baby spinach and arugula mix 
  • Red bell pepper, chopped
  • Grape tomatoes
  • Shredded carrots
  • Feta cheese and toasted pecans on the side {for those w/ cheese or nut allergies}
  • Balsamic vinegrette to taste & toss (Remember, a little goes a long way)
